Philadelphia is partnering with Aaron Watson, NACC Care Chef of the Year, to inspire menu expansion in care homes.

Mindful of ingredient costs while integrating a well-balanced diet, Watson’s menu provides versatility while adhering to the challenge instigated by Philadelphia.

“Philly set me the challenge of developing a four-course menu to help inspire care home chefs this winter and demonstrate Philly’s versatility as an ingredient with multiple uses,” says Aaron Watson, head chef at Primrose Bank Care Home.

From truffle and chive philly profiteroles, to smoked haddock mornay, sweet and savoury dishes can be expanded. Consisting of canapes, a starter, main, and dessert, the menu finds creative ways to incorporate Philadelphia.

“Although presented as a four-course menu, caterers can easily repurpose the dishes at other opportunities – the mushrooms on toast makes a fantastic breakfast option, whilst miniature versions of the turnovers would work brilliantly for afternoon tea,” says Watson. “By showcasing Philly in this way, I hope to be able to inspire my peers working in the cost-sector and demonstrate how one ingredient can go a really long way.”
